Uluva Manga is the favorite fresh mango pickle every summer season. This mango pickle is so unique with its special aroma because of the dominant ingredient Uluva or Fenugreek (methi or uluva)! It tastes so good with rice, chapathi or anything (I like it w. For Uluva Manga, the raw mangoes has to be mature enough. These mature mangoes usually start to ripe in a day or two after it is plucked. So the pickle has to be made on the same day when mangoes are plucked, otherwise it will taste different. The mangoes used for making uluva manga has got some specialities. Its skin has to be very hard. There is a mango variety called “Moovandan” that is used for making this particular pickle. Even “Kilimookkan” variety mangoes taste good as the characteristics suits for making uluva manga. The mangoes from these trees have a very tough skin, have lots of flesh, the seed is small and have the perfect sour taste for making pickle.
